Made from 100% Mourvedre, we selected the fruit from a vineyard block dedicated to our rosé program. The Mourvedre grapevines flourish on the sandy, free-draining soils of the Osoyoos lake bench. The vines were trained on a single-cane VSP (vertical shoot positioning) trellis; crop thinning was carried out to target a modest 3.5 tons per acre.
Elegance Rosé is made intentionally; we selected Mourvedre grapes and vinified them explicitly for this rosé to highlight the very heart of this grape. Following the typical protocol for an abbreviated red wine vinification, we hand-picked the small, thick-skinned berries on October 9th at high ripeness levels and chilled the fruit overnight be-fore hand sorting. We then destemmed and crushed the fruit directly into the press, allowing just three hours of skin contact, like a short steep in making tea. The pale-coloured free-run juice is fermented away from the skins in stainless steel for ten days, and we bottled the wine on March 10th, 2020. 275 cases produced.
